Enchiladas with Chicken and Cheese 
3 whole breasts of chicken, cooked 
1 lb. Jack cheese 
2 medium onions, chopped 
1-2 tbl. chopped chili peppers 
1 1/2c. sour cream 
Salt and pepper to taste 
24 tortillas 
enchilada sauce 
Dice chicken and put chicken, cheese, and onion through a grinder. Add chili pepper and sour cream. Season generously with salt and pepper. Blend well. 
Heat 1/4 inch oil to 350. Place tortillas one by one in hot oil for 3-5 seconds. Dip each tortilla in enchilada sauce. Place 2 1/2 tbl. of chicken mixture on each and roll. Bake 20 minutes in 350 oven.
