Zucchini Soup 
4 cups sliced zucchini 
1 small onion (or more if you're an onion lover) 
2 tbsp butter 
1 (10 3/4 oz) can Cream of Chicken or Celery Soup 
1 finely grated carrot 
2 cups of water 
1 tsp salt 
1/2 tsp black pepper 
1/2 tsp basil leaves 
Place the zucchini, onion and butter in a 2 quart saucepan, and cook on medium-high heat for 10 minutes.  Mash or zap in a blender, using a little of the water if necessary.  Add remaining ingredients.Cook on high for 10 minutes Let sit for 5 minutes (or longer) to blend flavours.
