Tortilla Soup
4 cups chicken stock
6-8 oz. boneless chicken breasts
1 avacado, diced 
1 red onion, diced 
1 bunch cilantro diced 
1 medium jalapeno, chopped finely 
1 lime sliced in fourths and then sliced in thin slices 
1 tomato diced 
1 cup mozzerlla cheese 
salt and pepper 
4 flour tortillas (cut in half and then slice in thin strips,toasted
Cook chicken in broth; remove and chop.  Return to broth.
Meanwhile, place all the remaining ingredients in separate bowls and gently warm them in a micro.  Don't cook them, you just want them warm enough so they don't cool down the soup and put on table. 
 
Place broth with chicken in a soup tureen on table and let everyone help themselves.  Give them a bowl of chicken and broth and let them add their own veggies and cheese and top with cheese and tortilla strips.
