D's Hot House Tomato Bisque 
 
 
2 shallots, chopped 
1 tablespoon olive oil 
3 tablespoons fresh thyme 
1 tablespoon minced garlic 
28 oz. tomato puree
3 hot house tomatoes chopped fine or 14.5 oz. can fresh-cut tomatoes
2 cups chicken stock 
1 tablespoon coarse salt 
1 tablespoon fresh ground pepper 
Sauté shallots in oil, then add thyme and garlic.  Add remaining ingredients and simmer 30 minutes. 
Float a cheese-topped crouton and garnish with thyme.
