Thai Spiced Pumpin Soup

half cup veg or peanut oil
 
1 leek, sliced and washed 
2 onions, chopped 
4 cloves garlic, crushed 
1/4 cup coarsley chopped ginger
 
2-3 small red chilies, finely chopped
 
1 kg. peeled, seeded and chopped pumpkin 
 
1/2 desiccated coconut 
finely grated rind and juice of 3 lemons 
1/4 cup brown sugar 
1 teaspoon shrimp paste 
1 cup chopped coriander
 
1 litre chicken or veg stock 
toasted shredded coconut 
julienned red pepper and sliced green spring onion for garnish 
Heat oil in large saucepan and cook leek, onion, garlic, ginger and 
chillies over medium heat, covered for 5 minutes.  Add remaining ingredients, bring to the boil and simmer 25 minutes or until pumpkin is tender. 
Process in batches until smooth and adjust seasoning if necessary.
 
Serve with the garnish. Serves 8
