Cream of Spinach or Cauliflower Soup
Basic white sauce:   
3 Tbl. butter 
4 Tbl. flour 
1/2 tea. salt 
1/8 tea. pepper 
2 cups hot milk 
Melt butter in saucepan and stir in flour, salt and pepper; add milk.
 Cook stirring until thickened and smooth. 
To this sauce, add 1 1/2 cups pureed vegetables and 1/2 tea. sugar. 
Heat and season to taste
