Nic's Potato Vegetable Soup
  3 cups Frozen O'Brien Potatoes 
  1 1/4 cups chicken broth 
  1 tablespoon cornstarch 
  2 cups milk 
  3/4 teaspoon salt 
  1 cup American cheese, shredded 
  3 tablespoons parsley, chopped 
  2 tablespoons butter 
  1 cup cooked vegetable 
  1 cup cooked turkey, ham, or chicken (optional). 
In a 2 quart saucepan, mix potatoes and broth.  Heat to boiling, cover, turn heat to low and cook gently 2-3 minutes, till potatoes are tender. 
Mix cornstarch with a little of the milk, blending till smooth.  Combine with remaining milk and salt; stir into potato mixture.
Heat to boiling, stirring till mixture is smooth slightly thickened.  Remove from heat and add cheese, parsley and butter.  Add vegetables and meat.
