Sweet Potato Soup 
"This colourful soup is thick and tasty with its slight curry flavour. If curry isn't a favourite accent, decrease the curry paste to 1 tsp. You don't have to puree the soup to enjoy its fresh taste. 
2 Sweet potatoes ( 2 1/4 lb) 
1 tbsp Vegetable oil 
1 Small onion, finely chopped 
2 gloves garlic, minced 
1 tbsp minced gingerroot (or 1 tsp ground ginger) 
2 tsp mild curry paste 
4 cups vegetable or chicken stock. 
Peel and cut sweet potatoes into 1/2" cubes, set aside. 
In large saucepan, heat oil over medium heat, cook onion, garlic, ginger root and curry paste, stirring occasionally, for 3 minutes or until softened. Add sweet potatoes, stir for 1 minute or until coated. 
Add stock and bring to boil, reduce heat, cover and simmer for 10 minutes or until potatoes are tender. With immersion blender or in blender, puree soup, reheat if necessary. 
Makes 4 servings. 
Tip: Dress up a bowl of soup with a sprinkling or drizzle of drama. Her are some of The Canadian Living Test Kitchen's favourites:
