  Potato Soup with Caraway Seed
  4 cups diced potatoes 
  1 cup sliced celery 
  1 cup chopped onion 
  2 to 3 cups water 
  2 to 3 tsp. salt 
  4 Tbls. butter 
  1 cup milk 
  1 cup cream 
  1 Tbls. parsley 
  1/2 to 1 tsp. caraway seeds 
  pepper to taste 
  Peel and dice potatoes and place in a large pot.  Add onion and celery.  
Cook until tender, about 20 minutes. 
When done, mash vegetables with 
masher, leaving small chunks.  Stir in the milk, cream, parsley, caraway 
seeds and pepper to taste.  Add the butter and continue to heat on medium
flame until melted. 
  *Optional, dice and fry bacon until crispy.  Garnish soup with bacon bits.
