  Potage Crecy
  1 cup sliced carrots 
  3 Tbl. butter 
  1/2 cup finely chopped onion 
  4 cups chicken stock 
  1 bay leaf 
  1/2 tsp. salt 
  1 tsp. dry basil 
  1 tsp. sugar 
  1/2 tsp. nutmeg 
  1/3 cup uncooked white rice 
  1/2 cup half-and-half 
  pinch of white pepper 
  fresh croutons for serving 
  Saute the sliced carrots in the butter for 5 minutes without browning.  Add the onion and saute 3 minutes more.  Add the chicken stock, bay leaf, salt, basil, sugar, nutmeg, and rice.  Cover and simmer for 30 minutes. 
Remove the bay leaf and puree in a food processor or food mill.  Add the half-and-half and the pepper.  Taste and correct for seasonings.
 Reheat and serve with fresh croutons.
