Mushroom Soup  
1/2 lb. fresh mushrooms 
Small piece of onion 
Bay leaf 
2 TBLS. oil 
1 clove garlic, sliced 
2 1/2 Cup stock 
salt 
pepper 
nutmeg 
cayenne pepper 
1 TBLS. sherry (optional) 
Wash and remove stems of mushrooms. Place stems into saucepan with bay leaf, garlic, onion and stock and bring to boil; simmer for 10 minutes. Strain into cup and add milk to make 3 3/4 Cup (discard stems, bay leaf, etc). 
Stir flour into oil in saucepan. When bubbly, pour in 1/2 Cup of the milk mixture over high heat until thick. Repeat with the rest of the mixture. 
Chop mushrooms, saute  in oil and add with salt, pepper, cayenne, nutmeg, and sherry. Simmer for 4 minutes.
