Garlic and Lime Soup 
2 Tbls. olive oil 
1/4 cup finely chopped garlic 
1-2 boneless chicken breast 
6 cups chicken or veggie stock 
2 cups canned or fresh chopped tomatoes 
1/4 cup fresh lime juice 
salt and pepper to taste 
cayenne pepper to taste 
Heat the olive oil in a large saucepan over moderate heat and saute the garlic about 5 minutes, until light golden brown. Add the chicken and saute an additional 2 minutes, stirring frequently. Add the remaining ingredients and bring to a boil. Reduce the heat and simmer covered for 5 minutes. Serves 4 to 6.
