  Cream of Broccoli Soup 
  4 Tbsp. butter or marg. 
  1 1/2 Cups chopped onion 
  1 medium chopped green pepper 
  4 Cups chopped broccoli 
  1 tsp. salt (more to taste) 
  2 1/2 Cups water or stock 
  2 Cups milk 
  1/2 - 1 Cup heavy cream (or sour cream) 
  pinch of allspice 
  Black pepper and white pepper to taste 
  dash of tamari 
  dash of thyme or basil 
  dash of dillweed 
  Optional: 1/2 Cup buttermilk, whisked in just before serving. 
Saute the onions in butter until translucent.  Add the green pepper,  chopped broccoli, water or stock and salt.  
Cook 20 minutes until broccoliis tender but still bright green. 
Puree little by little with milk in the blender.  Make sure it's pureed until absolutely smooth. 
Whisk in the sour or heavy cream and the seasonings.  Adjust the salt and pepper if necessary. 
Whisk in buttermilk just before serving.  Can be garnished  with chopped green onions.
