Taco Soup 
1 lb. extra lean ground beef 
1 medium onion chopped 
1 ( 15 oz.) can great northern beans, undrained 
1 ( 15 oz.) can pinto beans, undrained 
1 ( 15 oz.) can kidney beans, undrained 
1 ( 15 oz.) can black beans, undrained 
1 ( 1.25 oz.) packet taco seasoning 
1 ( 2 oz.) packet ranch dressing mix 
1 ( 28 oz.) can diced tomatoes 
tortilla chips ( optional) 
grated cheese ( optional) 
Cook ground beef in large nonstick soup pan 2 minutes over medium heat, stirring constantly. Drain off fat. Add chopped onion and cook 1 more minute. Add remaining ingredients except tortilla chips and grated cheese. Bring to a simmer. Cover, lower heat and simmer for 20 minutes. 
Serve sprinkled with tortilla chips and grated cheese. Serves 7. ( 1 1/2 cups serving size)
