Mixed Bean and Ham Soup
Shredded ham (the more the better) and add ham hock if you have one  
 
2 Cups mixed beans (soak overnight and drain) 
1 cup chopped celery 
1 cup chopped carrots 
1 cup chopped onion 
1 (28 oz.) can chopped or crushed tomatoes 
1 tsp. each: salt, pepper, rosemary, thyme,and dry mustard to taste 
 
1 1/2 to 2 quarts water 
Cover the ham hock or ham  pieces with water, cook 1/2 hour.  Add the 2 cups of soaked and drained beans, the tomatoes, carrots, celery and onions and seasonings; cook for 2 1/2 hours. 
Crockpot-Rinse beans and put all ingredients in pot for 8 hours.  Use a little less water if you do.
