Hot and Spicy Many Bean Soup 
  
2 c. mixed beans and split peas 
4 hot Italian sausages, cooked and chopped 
1 ham hock 
5 slices cooked bacon, crumbled 
6 ribs celery, chopped 
2 carrots, diced 
1/2 c. onion, chopped 
1 Tbsp. Cajun spice 
Salt to taste 
Soak beans and peas overnight. Rinse and drain beans. Add 8 cups water and the remaining ingredients. Cook until vegetables are tender.
