Boiled Peanuts

6 lbs. green peanuts
1/2 cup salt
spices, optional


Place peanuts in a tall pot and just cover with water. The peanuts float, so be careful not to over-fill the pot. Add about 1/2 cup of salt. You may add more or less salt, depending on the taste your going for. You can also add various other spices. Many people like Cajun peanuts, so you can also add whatever cajun spices you like.

Bring to a vigorous boil, then immediately turn down to a simmer. Stir the peanuts every so often so that they cook uniformly. After about 2 hours, try a couple of peanuts and see if they're done. They may not be soft enough and you may need to cook longer. You may also decide to add more salt at this time.

If they are cooked enough, but not salty enough, you can take them off the stove and let them sit in the salt water.

Note: If you use Jumbo green peanuts, they take longer to cook than the small ones. Also, you can freeze the peanuts to defrost and eat later. Put them in 1 qt. freezer bags and store them for months. Defrost the bag and heat them up in the microwave, if desired.
