Raspberry Jalapeno Topping
1 pint of fresh raspberries 
1 jalapeņo pepper, seeded and finely chopped 
1/3 cup sugar 
Juice of 1/2 lemon 
3 tablespoons of fresh mint leaves, chopped 
Place raspberries, chopped jalapeņo, sugar, and lemon juice in a small saucepan.  
Gently stir over low heat, just until mixture is heated through and raspberries are starting to fall apart.  
 
Remove from heat, then stir in chopped mint. 
Makes 1 cup. 
Serve with Cornmeal Griddle Cakes (see Breakfast and Brunches)
