Alfredo Sauce
This is also from a Bistro in Italy

8 Tablespoons, sweet butter, softened
1/4 cup heavy cream
1/2 cup Percorino Romano or Parmiggiano Reggiano Cheese, grated very finely
Pepper to taste
1 lb. fettuccine
Grated cheese for top of pasta

Using a mixer cream butter until light and fluffy. Using a fork, blend in cream a little at a time until well combined. Mix in grated cheese and add the pepper to taste. Cover and set aside.

Cook pasta in salted boiling water until it is tender to taste. Drain well. Add cheese mixture and mix well with hot pasta and serve at once with extra grated cheese.

Pasta will still be hot if you mix it right after draining it.
