Miscellaneous: Tarragon Sauce

Tarragon Sauce

1/2 C. butter or margarine
1/3 C. dry white wine
1 T. tarragon vinegar
2 T. minced fresh tarragon or 2 tsp. dried tarragon
1 T. chopped chives (or green onion)
1/2 tsp. salt
1/4 tsp. black pepper
Dash hot pepper sauce (Tabasco?)
3 egg yolks

Place all ingredients except egg yolks in a 2 Cup glass measure. Cook on HI (Max power) for 2 minutes.

Meanwhile, beat egg yolks in a small bowl. Stir in small amount of butter mixture into egg mix, then stir yolks into sauce. Cook on 50 (simmer) 2 minutes, stirring once. Beat until smooth. Serve immediately with poached eggs, broiled meats, hot veggies, etc.
