Lemon Wine Sauce
good for poultry and grilled fish

1 tbsp. olive oil
1 tsp. grated fresh ginger
1 tbsp. chopped lemon - rind and pulp
1/2 cup chicken stock
1/2 cup dry white wine
1 tbsp. honey
1/4 cup fresh lemon juice
1 tsp. soy sauce

In a small heavy saucepan, heat the oil over medium heat. Stir in the ginger and the chopped lemon. Saute for 1 minute.

Stir in the chicken stock, wine, honey, and lemon juice and simmer over low heat for 15 minutes. Add the soy sauce.

Serve hot. Makes about 1 cup.

Note: can be prepared up to 2 days in advance and stored in the refrigerator. Rewarm over low heat before serving.
