Fruit Salsa

Fruit Salsa

1 cup diced fresh pineapple, (1/2 inch pieces)
2 cup diced strawberries (1/2 inch dice)
1 cup diced mango (1/2 inch dice)
2 tbsp. minced candied ginger OR 2 tsp fresh ginger
2 tbsp. fresh lime juice, or to taste
2 tbsp. packed light brown sugar, or to taste
1/2 cup slivered fresh mint leaves

Combine all ingredients in a nonreactive mixing bowl and gently mix together. Adjust lime juice or brown sugar if desired.

Ingredients may be prepared ahead of time but do not mix together more than 10 minutes before serving.

Author notes: This can be a great accompaniment to cakes and pastries or enjoyed by itself. Fruits may be varied. Dried cherry biscotti or tortilla crisps go well with this.
