Curry: Thai Style Curry Sauce

Thai Style Curry Sauce
Source of Recipe-Linda Leone 1997

1/3 tsp minced Caribbean red chili
1 chipotle chili (canned)
1 tsp of the adobo sauce from can
1 tsp dried powdered shrimp
1/8 tsp cracked pepper
1/4 tsp salt
1 tsp lime juice
1 tsp dried, ground ginger powder
1/8 C minced garlic (to taste)
1/4 C chopped onion
1 tblsp oil
1 1/2 tblsp brown sugar
5 tblsp bouillon
1 tblsp oyster sauce
pinch of lemon zest
3 sprigs cilantro, minced

Run all but the cilantro through the food processor. Mince the cilantro and add.

To use for fish; saute fish (in 2 inch cubes), until it begins to loose its translucency. Add curry sauce and simmer a few minutes. Serve over noodles or rice
