Welsh Rabbit with Beer

1 tsp. butter
1 lb. sharp Cheddar cheese, grated
3/4 c. beer, divided
dash of cayenne pepper
1 Tbsp. dry mustard
1/2 Tbsp. salt
1/2 Tbsp. Worcestershire sauce
1 egg, slightly beaten
1 tsp. cornstarch

Melt butter in top of double boiler. Add cheese and all but 1 tablespoon beer. Cook over hot, not boiling, water until cheese melts. Combine the seasonings with the remaining tablespoon beer and stir into the cheese.

Combine slightly beaten egg with cornstarch; stir into the cheese mixture and let it thicken slightly.
Serve immediately over toast or broiled tomato halves. Any left can be used cold as a spread for crackers.
