Wilted Cabbage

Amount Measure Ingredient -- Preparation Method

2 Cups Coarsely Shredded Cabbage 
2 Sliced Green Onions 
1/4 Tsp. Celery Seed-Freshly Bought 
1/4 Tsp. Salt 
4 Bacon Strips 
1/4 Tsp. Fresh Black Pepper 
2 Tsp. Sugar -- or To Taste 
3 Tbsp. Vinegar 
In a small bowl, combine cabbage, onion, celery seed and salt; set aside. 
In a skillet fry bacon until crisp and reserve 1 tablespoon of drippings.  
 
Crumble bacon over cabbage mixture. 
To hot drippings, add sugar and vinegar. Heat until sugar dissolves.
 
Pour over cabbage and toss to coat and serve immediately.

Wilted Lettuce Salad

1 Bunch Leaf Lettuce -- Torn 
6 Radish -- Thinly Sliced 
5 Green Onions -- Sliced 
Dressing: 
  
5 Strips Bacon -- Fried Crisp and drained; reserve drippings in pan
2 Tbsp. Red Wine Vinegar 
1 Tbsp. Lemon Juice 
1/2 Tsp. Sugar 
1/2 Tsp. Pepper 
Toss salad in a large bowl. 
In bacon pan, combine reserved drippings, vinegar, lemon juice, sugar and pepper; stir well and heat.   
Immediately pour dressing over lettuce.
Toss and top with bacon and  serve immediately.
