Tomato/Onion/Cucumber/Mozzarella Salad

1 1/4 lbs (4 cups) chopped red onion 
2 1/2 pounds chopped kirby cucumbers 
2 1/2 pounds tomatoes, diced -- ripe
2 1/2 pounds Mozzarella -- cubed
1/2 cup extra virgin olive oil 
3 Tablespoons cider vinegar 
1 Tablespoon oregano -- crumbled
1 1/2 teaspoons sugar 
2 teaspoons salt 
1/2 teaspoon garlic powder 
1 teaspoon fresh ground pepper 
Chop the onion into one-quarter inch dice and set aside.  Cut cheese into one-quarter inch cubes.  Scrub and trim the cucumber, but do not peel; cut into one-quarter inch dice.  Refrigerate. Cut the tomatoes into one-quarter inch dice.  Put in strainer in a bowl and refrigerate.
Combine oil, vinegar, oregano, sugar, salt, pepper and garlic in a jar; mix well.
Combine the onions, cucumbers, tomatoes, and cheese in a bowl.  Stir the dressing into the vegetables.  Season with salt and pepper.This can be prepared up to 4 hours before serving.
Note: These steps can be done the morning of the party.  Or do the preliminary stuff the night before.  It is also a good idea to remove the seeds from the tomato.
