Springtime Salad 
  Apricot Dressing: 
 
  2/3 cup apricot nector 
  1/4 cup honey 
  2 Tbl. white wine vinegar 
  2 tsp. grated onion 
  1 tsp. dry mustard 
  1 tsp. paprika 
  1/2 tsp. salt 
  1/4 tsp. ground white pepper 
  3/4 cup veggie oil 
  1 Tbl. poppy seed 
Combine the first 8 ingredients in food processor.  With processor running, slowly pour oil into feed tube.  Add Poppy seeds and process until well blended. 
 
  Salad: 
 
  1 zuchini 
  10 cups torn salad greens,make them different ones and make them colorful 
  1 cup coarsely chopped dried apricots 
  1 package fresh enoki mushrooms 
  violets and panseys edible flowers 
Thinly slice the zucchini lengthwise into ribbons using a vegetable peeler.  Place salad in the large bowl, or on individual plates 
 
Garnish with ribboned zucchini, apricots, mushrooms and  flowers.  Serve with apricot dressing.
