Tomatoes Vinaigrette 
8 to 12 thick tomato slices, or peeled small tomatoes 
Marinade: 
1 cup olive or salad oil 
1/3 cup wine vinegar 
2 tsp. oregano leaves 
1 tsp salt 
1/2 tsp. pepper 
1/2 tsp. dry mustard 
2 cloves garlic, crushed 
Arrange tomatoes in an 8 inch square glass dish. 
In a tightly covered jar, combine all marinade ingredients together and shake well.  
Pour over tomatoes, over and chill 2 or 3 hours.  
 
Occasionally spoon marinade over tomatoes. 
To serve, arrange tomatoes on lettuce, top with onion and parsley, then drizzle dressing over top. 
Makes 6 to 8 servings.
