This recipe originated at SAS Institute in Cary, N. C.  
Special Spinach Salad 
2 Pkgs. (10-ounce) fresh spinach, cleaned and torn into bite-sized pieces 
1 small bunch watercress, cleaned and finely chopped 
1 pint cherry tomatoes 
1/2 pound bacon, cooked and crumbled 
1 medium red onion, sliced into thin rings 
1 large red pepper, sliced into thin strips 
1 can (2.2-ounce) pitted ripe olives, drained 
1 cup Gorgonzola or blue cheese, crumbled (I usually don't use) 
Toss spinach with onion, bacon, red pepper, tomatoes and olives; Toss with dressing. Before serving, top each with crumbled cheese. 
Dressing: 
1 cup oil 
1/2 cup vinegar   
1/2 cup sugar 
1/2 teaspoon pepper 
1 teaspoon celery seed 
3 Tablespoons Dijon mustard 
1 small onion, diced 
Combine all ingredients. Blend well. Chill for several hours. 
Yield: 8 to 10 servings
