Pennsylvania Dutch Cole Slaw with Boiled Dressing 
Gourmet- 4/91 
1 large egg yolk 
1/4 C cider vinegar 
1/2 salt 
1/2 t dry mustard 
1/2 t cayenne 
2 T sugar 
1 T flour 
2 T heavy cream 
8 C fine shred cabbage 
1 carrot, grated 
3 scallions, chop 
2 t chopped fresh dill or to taste 
In saucepan whisk together yolk, vinegar, salt, mustard, cayenne, sugar, flour and 1/4 C water. Simmer, whisking, 6 - 8 min to smooth and thick. Stir in cream with salt and pepper to taste. Stir together cabbage, carrot, scallion, and dill. Pour dressing over and mix well. 
serves 4 - 6
