Tofu Mayonnaise
    
1 cup firm tofu cubed 
1/2 cup plain-lowfat yogurt 
1 tablespoon tarragon vinegar 
2 teaspoons vegetable or olive oil 
1 teaspoon prepared mustard 
1/4 teaspoon salt, or to you taste 
1/8 teaspoon cayenne or black pepper or to your taste 
2 tablespoons minced tarragon, chives or parsley. 
  
In a food processor or blender whirl the tofu, yogurt, vinegar, oil, mustard, salt and pepper, for 30 seconds or until smooth, scraping the sides down once. 
Transfer this mixture to a container and stir in the herb of your choice.  
 
Cover and chill until thickened (about 30 minutes). Will keep covered and refrigerated for up to 1 week. 
Makes about 1 1/2 cups
