Summer Rice Salad 
3 cups cooked rice 
2 raw carrots, peeled and grated 
4 to 6 green onions. thinly sliced 
1/4 cup chopped parsley (optional) 
1/2 cup diced celery and leaves 
1 cup cooked & cooled fresh green peas, or thawed frozen peas (do not used canned) 
Dressing: 
1/2 salt 
1/4 tsp. pepper 
1/4 tsp dry mustard 
A good pinch of sugar 
2 tbsp. cider or wine vinegar 
4 tbsp. oil (your choice) 
Garnishes: (Optional)  
Good spoonful of capers 
2 tbsp. chopped nasturtium seeds 
nasturtium flowers (peppery taste) 
good handful of minced lovage 
handful of chopped walnuts 
Blend together the dressing ingredients. Pour over the rice salad and toss lightly with a fork. Add garnish to taste. 
Yields about 4 cups
