Rockin Rice Salad 
2 (16 oz.) cans black or red beans 
2 cups cooked white rice 
2 ears or 1 pack (10 oz.) frozen corn, thawed 
1 small red onion, thinly sliced 
handful of green olives, chopped 
1 small (6 oz) can sliced black olives 
2 red bell peppers, seede & diced 
1/2 cup chopped cilantro 
salt and pepper to taste 
Dressing: 
  
2 tbsp. Balsamic vinegar 
1/4 cup fresh lime juice 
1/4 cup olive oil 
2 to 3 tbsp. Worcestershire sauce 
2 to 3 tbsp. soy sauce 
Toss the salad ingredients until well combined.  In a small bowl, whisk together the dressing ingredients.  Pour vinagrette over salad and toss well to coat.
