Black Bean and Rice Salad

Amount Measure Ingredient -- Preparation Method

1/2 cup long-grain white rice 
2 tablespoons red wine vinegar (or balsamic) 
1 tablespoon olive oil 
2 tablespoons water 
2 tablespoons chopped red onion 
1 medium garlic clove -- crushed 
1 cup canned black beans -- rinsed & drained 
1/2 cup chopped fresh cilantro 
salt and pepper 
Bring a large pot with 2-3 quarts of water to a boil 
 
Add rice and boil, uncovered, about 10 minutes.
Test a grain; rice should be cooked through but not soft; drain.
Meanwhile whisk vinegar, oil and water together.   
Add onion and garlic.  
Add to rice with the beans and cilantro and toss with a  
fork.   
Add salt and pepper to taste.
