Tarragon Potato Salad 
2 lbs potatoes 
3 Tbsp white wine vinegar 
1 shallot, peeled and minced, or 2 or 3 green onions, minced 
3 Tbsp fresh tarragon, chopped 
salt and pepper 
1/4 cup mayonnaise 
Boil potatoes in a large pot of salted water over high heat until tender. Drain. Shake dry in pot. Dice. Transfer to a bowl and, while still warm, add vinegar, shallot or green onions, tarragon, salt & pepper to taste. Mix gently and cool to room temperature. Mix in mayonnaise and chill. Adjust seasonings if needed. 
Serves 6-8
