Potato Salad 
5 pounds new potatoes 
1 teaspoon salt 
1/2 teaspoon freshly ground black pepper 
1/4 cup cider vinegar 
1/2 cup salad oil 
6 thinly sliced green onions, with the tops 
2 cups celery, diced 
1 cup cucumber, peeled and diced 
1/2 cup minced parsley 
4 eggs, hard cooked, divided 
1 cup mayonnaise 
1 cup sour cream 
1/4 cup tarragon vinegar 
Cook potatoes: peel and dice Boil eggs, peel and dice 3 of them. Mix salt, pepper, oil and cider vinegar; mix with warm potatoes.  Let stand while preparing cucumbers, celery, onions and parsley. 
Blend mayonnaise, sour cream, and tarragon vinegar Mix dressing with vegetables and 3 eggs.  
 
Chill several hours before serving. Garnish with slices of remaining boiled egg. 
Yields 12 generous servings.
