Herbed Potato Salad  
"Eat Right Lose Weight" Oxmoor House  
1 1/2 pounds red skinned potaotes, peeled and cubed 
1 hard cooked egg white 
1/4 cup chopped red bell pepper 
1/4 cup celery 
2 TBS. chopped fresh parsley 
2 TBS. chopped fresh chives 
2 TBS. plain nonfat yogurt 
2 TBS. low fat mayonnaise 
1 TBS. Dijon mustard 
1/4 tsp. dried dill weed 
Place potatoes in a large saucepan; add water to cover.  
Bring to a boil; cover,reduce heat to medium and cook 15-20 minutes or until potato is tender.  Cool slightly. 
In a large
bowl, combine potato, egg white, red pepper, celery, parsley and chives.
 In a smalll bowl, combine yogurt, mayonnaise, mustard and dill weed.
 Add to potato mixture and toss lightly to coat.  Cover and chill.  Makes eight servings of one half cup each.
