Tomato Basil Pasta Salad 
1 (12 oz.) Package of tomato basil penne pasta 
1/2 cup extra virgin olive oil 
1/3 cup balsamic vinegar 
1 cup scallions, chopped 
1/3 cup fresh chopped basil 
2 cups Plum tomatoes, halved & sliced 
1/2 cup yellow onion, julienne 
10 oz. Provolone cheese, julienne or cubed 
5 oz. Genoa Salami, julienne 
1/3 cup Parmesan cheese, grated 
Salt and Pepper to taste 
Cook pasta according to instructions. 
Whisk together olive oil, vinegar, scallion, basil sand and pepper in a bowl 
and set aside. 
Toss pasta, onions, provolone, and salami in large mixing bowl, then blend with dressing.  Sprinkle with Parmesan cheese and serve.
