  PARADISE PASTA SALAD (from Winnie) 
 
  1 package 12 oz. pasta (any kind) cooked, drained and        cooled 
  1 can (16 oz.) pineapple chunks or tidbits drained, save        the juice 
  1 ripe papayas, peeled, seeded and cut into bite size        pieces or grapes or any other fruit you choose. 
  1 small cucumber, peeled, seeded and diced 
  1 Tablespoons minced fresh ginger root 
  1/2 cup flaked coconut 
  1 1/4 cups fresh made or bottled poppy seed dressing or        use 1/2 cup off the pineapple juice and 3/4 cup of         honey mustard dressing 
Combine cooked pasta, pineapple, papayas, cucumbers and coconut in a large bowl. 
Stir dressing and ginger root together: pour over mixture and toss very gently until well mixed.  
Cover and chill.  Just before serving, sprinkle with additional coconut
