Peach Supreme 
from the Houston Junior League Cookbook 
  
1 can (28 ounces) sliced peaches 
1 cup syrup from peaches, heated 
1 small package (3 ounces) lemon-flavored gelatin 
2/3 cup creamed cottage cheese 
1/2 cup chopped pecans (optional) 
1/2 cup heavy cream 
Drain sliced peaches, reserving 1 cup syrup. Dissolve gelatin in hot syrup; allow to cool. Add peaches, cottage cheese and pecans. Whip cream to medium consistency; add to gelatin mixture. Pour into a 6-cup serving dish and chill well. Salad will not be firm enough to unmold. 
SERVES 6
