Ginger Dressing 
3 tablespoons minced carrot 
3 tablespoons minced peeled fresh gingerroot 
2 tablespoons finely chopped lemon, with some rind 
1 cup chopped onion 
3/4 cup seasoned rice vinegar 
3/4 cup water 
2 tablespoons ketchup 
1/8 teaspoon salt, optional 
1/8 teaspoon ground pepper 
Good shot of Tabasco, optional   
In a blender combine all the ingredients and blend at high speed for two minutes. Let sit awhile, shake well. Makes a scant quart. 
Note: Good on chicken salad and also as a marinade for grilled shrimp or chicken breast.
