Creamy Italian Garlic Dressing
1/2 cup low-fat buttermilk 
1/2 cup low-fat cottage cheese 
1 medium-size garlic clove, minced 
2 water-packed artichoke hearts, rinsed, chopped 
1/4 small onion, minced 
2 tea. fresh lemon juice 
1 tea. tamari or soy sauce 
1 tea. cider or wine vinegar 
1/4 tea. dried leaf oregano 
1/4 tea. grated Parmesan cheese 
1 generous tea. minced fresh parsley 
Place all ingredients, except parsley, in a food processor fitted with the metal blade.  Process until smooth.  Add parsley.  
 
Pour into a bowl, cover and refrigerate until chilled. 
Dressing can be refrigerated up to 3 days.  Makes 1 cup.  8 calories per tablespoon.
