Chipotle Vinaigrette

1/4 cup cider vinegar
1 tablespoon grainy mustard
1 tablespoon pureed chipolte in adobo
1 tablespoon roughly chopped fresh cilantro
1/4 cup fresh lime juice
2 teaspoons sugar
1/2 cup extra virgin olive oil
salt and pepper, to taste
Whisk together the first 6 ingredients. Whisking constantly, add oil in a thin stream. Whisk in salt and pepper.
