Minted Cucumber and Tomato Salad 
From: The Morrocan Collection by Hillaire Walden 
  
1/2 a large cucumber, peeled and halved lengthways  
4 well-flavoured tomatoes 
2 spring onions finely chopped 
1 tbs. lemon juice 
2 tbs. extra olive oil 
pinch of sugar 
2 tbs. chopped mint leaves 
1 tsp. chopped preserved lemon rind 
salt and pepper 
Scoop out the seeds from the cucumber.  Slice the cucumber and arrange it on a serving plate with the sliced tomato. Sprinkle over the spring onion. 
Whisk together the lemon juice and oil and season with salt and sugar. Pour the dressing over the salad.  
Scatter the mint leaves and lemon rind over the salad and grind over black pepper. 
Cover and chill lightly before serving.
