 Tijuana Coleslaw

  Amount Measure Ingredient -- Preparation Method

  1 medium cabbage -- finely shredded 
  2 tablwspoons chopped fresh cilantro 
  2 carrots -- peeled and shredded 
  2/3 cup mayonnaise 
  1/3 cup sour cream 
  2 tablespoon fresh jalapeno -- seeded and minced 
  1 tablespoon chili powder 
  1 teaspoon salt 
  1 tablespoon balsamic vinegar 
  1 small onion -- thinly sliced 
  1 small red pepper -- thinly sliced 
  pitted black olives -- optional 
In a large bowl, combine cabbage, cilantro and carrots.
 Blend mayo with sour cream until creamy.  Add next 6 ingredients to mayonnaise mixture.  Fold gently into cabbage. 
Garnish with olives if desired.
