Chicken Salad with Honey Mustard Dressing 
Recipe courtesy of The Wedgwood Inn 
New Hope, Pennsylvania 
 
2 cups cubed cooked chicken 
2 cups diced apples 
1/2 cup chopped walnuts 
1/2 cup chopped celery 
1/2 cup mayonnaise 
1/4 cup honey 
3 tbsp Dijon mustard 
dash of dried rosemary 
Combine chicken, apples, walnuts, and celery; set aside. 
Combine mayonnaise, honey, Dijon mustard, and rosemary. Gently stir into chicken mixture. Cover and chill. To serve, spoon onto lettuce-lined plates 
Makes 3-4 servings. 
 
Chicken Salad with Honey-Mustard Dressing 
4 or 5 boneless chicken breasts 
1/2 c. chicken broth 
1 papaya 
1 cantaloupe 
1/2 honeydew melon 
1/3 c. honey 
2 Tbsp. Dijon mustard 
Cook chicken breasts in the broth, covered, for 10 minutes. Remove from pan and cool. When cool, chop into bite-size pieces. Slice the fruit; add chicken. Mix the honey and mustard and add to the salad. Serve on bed of lettuce.
