2 large pita breads
Salt and pepper
1/4 cup fresh lemon juice
1/3 cup olive oil
1/2 head romaine lettuce, torn into bite size pieces
1/2 cup parsley, coarsely chopped
4 medium green onions, sliced
1/2 cup fresh mint, coarsely chopped
1 medium cucumber, peeled and chopped into 1/2 " cubes
3 medium tomatoes, cut in 1" cubes
1/2 teaspoon sumac


Preheat oven to 375 degrees F. Toast pitas until golden and crisp (15 minutes). Let cool. Break into 1/2 " pieces.

In a small bowl, mix salt and pepper (to taste) lemon juice and olive oil.

In a large salad bowl, toss lettuce, parsley, green onions, mint, cucumber, and tomato. Sprinkle sumac and add toasted pita pieces over salad vegetables. Pour dressing over salad and toss well. Serve immediately.
