Cornbread Salad 
1 skillet of cornbread, crumbled (10 inch skillet) 
8-10 Slices bacon cooked and Crumbled 
1/2 cup Finely chopped celery 
1 large Vadalia onion chopped 
1-2 Tomatoes chopped fine 
1 Green pepper chopped fine 
2-4 Hard boiled eggs chopped 
Mix all ingredients with enough mayonnaise to hold together. Chill at least 2-3 hours or overnight. 
You can use other things in it as well, like black-eyed peas, parsley in it, spring onions or purple onions instead of vadalia, etc.
