Cornbread Salad by Gina
2 (8 oz.) boxes Jiffy® cornbread mix 
10-12 slices cooked bacon, crisp 
2 tomatoes chopped, drain juice 
1 medium onion chopped 
1 pint jar mayonnaise, no substitute 
1 medium to large green pepper chopped 
Prepare cornbread according to directions on box, cool.  
After it has cooled crumble into a large bowl.  
Add remaining ingredients and stir until it is all moistened;  do not overmix.  
Refrigerate overnight to allow flavors to blend.
