Spanish Rice

Spanish Rice 

2 TBL. oil 
2 tsp. minced onion 
1 cup uncooked long grain rice 
3 cups water + 3 beef bouillion cubes 
1 (8 oz.) can tomato sauce 
1 cup canned diced tomatoes 
1 tsp. salt 
1/4 tsp. black pepper 
1/4 tsp. seasoning salt 

Place oil in saucepan. 

Add onion and rice and cook until rice is slightly browned.

Add rest of ingredients.   

Cover and simmer about 45 minutes or until liquid (or most of liquid) is absorbed.

Sprinkle with grated cheese, if desired, before serving.
